New culinary classes!
Chef World Introduction -crn 10930 2 credit course Fridays (April 4 thru June 6) 8:30-11:30am
Taught by Jules Schmitz, this class is a hands-on lab with basic knife skills, mother sauces, kitchen safety, sanitation, plating design and dessert production instruction. Trips to local restaurants and resorts will give students a glimpse into the fast-paced work environment of a professional kitchen.
Where does spaghetti grow? Planned for Spring or Summer 2008. This class will involved students in sustainable practices related to the food service industry and will explore the many options involved in selecting culinary products within a 150-mile radius of Bend. This class inspired by a visit to Seattle Central Community College and it's sustainability program along with Barbara Kingsolver's book "Animal, Vegetable, Miracle".
No Fat, No Flavor, Not True Developed for our senior community and planned for summer 2008 by Chef Kristen King, the philosophy behind this class is to prepare quick and light dishes using thoughtfully chosen ingredients for flavor as well as health benefits.
