Ever thought about being a chef on a cruise ship? What about in your own restaurant? In a French bakery? Then Central Oregon Community College’s Cascade Culinary Institute® (CCI) is the program for you. The CCI program is your first step to becoming one of the best in the business, providing a solid foundation for a successful career.
The first term provides hands-on training, teaching basic culinary skills. After you’ve mastered the fundamental techniques, progress to the second term for more advanced baking, hot food production, dining room management and more.
And in your third term? Well, this is where it really comes together, as you learn to create your own masterpieces, designing five-course meals fit for a king.
But wait, there’s still one more term left and this is where you get to take your wares on the road. That’s right! During the fourth term, students participate in a local internship, working under the guidance of a local chef or caterer, as well as refining your business, writing and math skills through additional coursework.

Additional coursework in the Dietary Managers certificate program will prepare students to sit for the national examiniation to become a Certified Dietary Manager. A dietary manager is an asset to hospitals, long-term care facilities, retirement centers, schools, correction facilities and other food service settings.
